SALMON BURGERS

This is one of our favorite recipes from a great out-of-print recipe book called SLICE: Health Inspired Food by Barb Davies and Jennifer Rallison.

 

INGREDIENTS:

2 lbs skinless will salmon fillet cut into cubes

1 med onion, finely diced

2-3 med potatoes, boiled and cut into cubes

3/4 cup fresh dill, minced

1 large free range egg

2 tbsps milled flaxseeds or chia seeds

2 garlic cloves, crushed

2 tbsps fresh lemon juice

sea salt & fresh grnd pepper

1 tbsp extra virgin olive oil

 

DIRECTIONS:  In a food processor, combine salmon, onion, potatoes, dill, egg, flaxseeds, garlic, lemon juice, salt and pepper.  Blend until well combined. Shape into 12 patties.

 

In a large saute pan, heat oil over medium-high heat.  Fry patties for 5-6 minutes per side, or until browned.

DISH IT UP:  Serve on a bun with lettuce, avocado, pickles +/or tomatoes and a green salad.

Cooked burgers can be frozen & reheated for quick leftovers.
